A FANATIC of the books of Marco Pierre White and Charlie Trotter (and a good writer himself), Vivek Singh eschewed engineering for cooking, initially preparing in-flight meals for passengers departing Mumbai. His ambition and dedication subsequently saw him rise to head chef of Jaipur’s leading Rajvilas Hotel at 26.
